Ahh! The aromatic smell of a freshly paked pizza. Coupled with the site of these two items, aperson cannot help but desire sitting down to consume it.

There was an actual study on how food aromas can influence the brain. If a person is exposed to the sight and smell of a pizza, they are more apt to want to partake in consuming it, even if they are not that hungry!

This particular desire appears to be driven by pleasure, not just by the need for calories. The scienntific word for this is heuristic cues. For example, if you are looking at a menu and you see some strange and new dishes, you may make a mental shortcut and choose an item that you are more familiar with.

On the other hand,a person's choice can be prompted by the highlighting of a menu item or adding a "reccommended" or "popular choice" wording next to the item. This in turn awill create a mental shortcut for a qucik decision.

A restaurant customer may make a choice with little or no thought when following these subtle prompts. Combined with an enticing aroma at the entryway (cinnamon, coffee, baked bread etc. customers will have a bigger appetite and be more opne to eating more in order to staisfy their food desires.

This is not a bad thing because there is pleasure derived from eating and if someone is on a diet, they can easily avoid temptaions by ordering something they know fits their diet. Many restaurants today hae more healthy choices.
